Now, you may be thinking, peach and avocado? Together? Really? I know it sounds like an odd combination but bear with me, because it tastes amazing. This salad is perfect for summer. It’s light, refreshing and simple. The sweetness of the peach complements the avocado and the soft textures combine perfectly together creating an explosion in your mouth. The dressing is sweet, yet tangy, giving the salad a little edge. This is perfect as a side dish to a main meal.
You can use any greens you like for this recipe, but I do recommend using delicate greens that are on the sweeter side. Mixed greens are the best option in my opinion.
This salad is super healthy, packed with vitamin E, fibre, potassium and antioxidants. So eat up!
- 3-4 Large Yellow Peaches
- 1 Large Avocado
- Mixed Greens
- 2 Tbs Pumpkin Seeds
- 2 Tbs Maple Syrup
- ¼ Cup Apple Cider Vinegar
- 1 Star Anise
- Place leafy greens on plate, cut peach and avocado into thin slices and mix together.
- For the dressing- Combine the maple syrup, apple cider vinegar and star anise in a small bowl and mix together. Allow to sit for 5-10 minutes to allow the flavours to set.
- Mix dressing through the salad, sprinkle with pumpkin seeds and serve.
