Summer is coming and I’m so excited! The weather has been warming up considerably over the last few weeks and it just makes me so happy eeeeppp! Seeing all the summer fruits starting to hit the shelves is getting me so pumped! I screamed in delight the other day when my mum came home with the first mango of the season. The last 2 weeks I’ve been spending a lot of my free time at the beach, it’s not quite warm enough to go into the water yet so i’ve just been lying on the sand, relaxing or doing some walking, which has been great. So, with it heading into summer and all I thought I’d do a more refreshing, cooling recipe. The strawberries are amazing right now so I thought I’d take advantage of it by making this delicious, super creamy strawberry milkshake!
As you all know, strawberries are amazing for your health. They are loaded with Vitamin C, fibre, potassium, vitamin K, magnesium and antioxidants. The red colouring in strawberries contains Anthocyanins, which stimulate the burning of stored fat. Regular consumption of anthocyanins, a class of flavonoids found in berries, can reduce your risk of heart attacks and strokes. Studies have shown that eating strawberries helps to lower homocysteine levels, which is an amino acid in the blood associated with damaging the inner lining of arteries. They also help to lower blood levels of C-reactive protein (CRP), a signal of inflammation in the body, which when present in high levels can cause heart attacks. So yeah, definitely eat your strawberries this summer!
I guzzled this shake down in about 2 minutes, it was so juicy, refreshing and tasty and it smelt so yum. The best thing about this recipe is that it’s super healthy for you. Theres no puss, hormones, bacteria or cruelty involved with it.
- 1 Punnet (250g) Strawberries
- 100g Frozen Raspberries
- ½ C Shredded Coconut
- 2 Tsp Pure Vanilla Extract (or 1 Vanilla Bean)
- 2 C Almond Milk (I used Blue Diamond Vanilla Unsweetened)
- Place the almond milk in the bottom of the blender, add the remaining ingredients
- Blend until smooth and combined
- Serve in a tall glass or large jar and enjoy!
