So it’s been a while since my last post- I know. But I am going to try and be more active on this blog and not just my Youtube and Instagram.
I thought I would share with you my pesto recipe. It’s super creamy, thick and zesty and best of all, super easy and quick to make. It’s also very versatile, my favourite combination is this pesto with whole-wheat pasta, but you could also dip breadsticks in it and use it as part of other sauces.
The key ingredients in this pesto (as with any pesto) is pine nuts and basil. Pine nuts are a fantastic source magnesium, vitamin E, vitamin K, manganese and iron. They also contain vitamins A, B, C, D and lutein. Basil is rich in vitamins A, C, K manganese, copper, iron and calcium. Basil has been shown to have antibacterial and anti- inflammatory effects due to the eugenol component of basil’s volatile oils. So try to get more basil into your day! You’ll be doing yourself a favour.
- 2.5 Cups tightly packed fresh basil
- ½ Cup pine nuts
- 2 Cloves garlic
- ½ Cup extra-virgin olive oil
- 1 Tbs lemon juice
- 3 Tbs nutritional yeast
- Add all ingredients into a food processor and blend until smooth and creamy. Add salt to taste if desired.
- Store in a air tight jar in the fridge.
